Ostrich & Tortellini Soup

Ready to eat in 40 minutes.

1 lb. Ground Ostrich
1 large Onion Coarse Chop
2 Cloves minced garlic
4 cans 14 oz beef broth (or use 6 cups water, 6 teas Beef Base)
1 can Stewed Tomatoes (chopped)
1/2 Cup mild Picante
1 teas. crushed basil
1- 7oz. pkg. cheese tortellini (can be dried or frozen)
1 red pepper diced
1 can mushrooms
1 cup freshly grated parmesean cheese

Saute onion, garlic, green pepper, ostrich and mushrooms in skillet.

In large pot, stir together broth, picante and basil (add more water if too strong).
Bring to a boil.
Add tortellini and simmer uncovered 10 to 20 mintues or until soft.
Stir in ostrich, red peppers, onion and garlic mixture and stewed tomatoes.
Sprinkle fresh grated parmesean cheese on each bowl before serving.
